“While working as a buyer and seller for VAEX, I came into contact with meat and the stories behind the products all across Europe. I wanted to do something with my passion for meat. That's why I started small in 2023. I bought a Dry Aging cabinet and began offering Dry Aged meat through a WhatsApp group. But there was demand for more. So, we decided to join forces, and now I'm building Meatmen in a serious way together with Dirk Govers (CEO VAEX). And here we are. An online shop, a physical store, events, business offerings, and of course, still the WhatsApp group for the true meat lovers!”

Light the BBQ, aiming for indirect heat and a temperature of around 130°C (266°F).
Take the meat out of the fridge and pat it dry with some kitchen paper. Trim off any loose pieces of meat and fat, then cut the pork belly into even cubes of about 4 x 4 cm.
Sprinkle the pork belly cubes with your BBQ rub. You can make your own rub or use your favorite store-bought one. Make sure all sides of the cubes are coated.
Is your BBQ up to temperature? Then add your wood chips. Cherry wood pairs well with the flavor of pork. I usually use chunks that I place between the coals, but just do whatever works best for you!
Place the cubes on your BBQ grate and close the BBQ with the lid. Let the pork belly cubes cook for 2.5 hours. All you need to do is check the BBQ temperature from time to time.
After 2.5 hours, take the pork belly cubes off the BBQ and put them in an oven dish suitable for BBQ use or an aluminum disposable BBQ tray.
Now distribute the sugar, maple syrup, and butter over the cubes and place the dish back on the BBQ. Close the BBQ again and leave it closed for 2 hours.
After 2 hours, remove the dish from the BBQ and take out the pork belly cubes. Clean your dish or use a new one and put the cubes back in.
Add the BBQ sauce and toss the cubes until they are coated on all sides.
Put the dish back on the BBQ one more time, for about 20 minutes, so the sauce can caramelize nicely. Serve the Pork Belly Burnt Ends immediately, with some toothpicks to pick them out of the dish.
